Mixed Berry Smoothie Bowl

A healthy and delicious breakfast to start the day! This smoothie bowl is incredibly versatile and can be made with a wide variety of fruit including strawberries or cherries depending on your preference.

It can be made in next to no time and is packed full of vitamins, minerals and antioxidants and is a great contributor to ensuring you get your five a day.

The bee pollen and desiccated coconut gives this thick and decadent smoothie bowl a lovely texture and we often whizz this up for a post-workout boost.

Mixed Berry Smoothie Bowl

Ingredients for the Smoothie:
  • 500g of frozen mixed berries
  • 200ml of water
  • 300ml of apple juice
  • 2 tsp cacao powder
  • 2 tbsp of Linden honey
To Decorate:
  • 2 tbsp bee pollen
  • 2 tbsp desiccated coconut
  • 2 tbsp of freeze-dried raspberries
  • 2 tsp cacao powder
  • A handful of extra berries

PRODUCTS USED IN THIS RECIPE

Method:

Add the frozen mixed berries, water and apple juice to a blender or Nutri-bullet and blend fully

Add the cacao powder and honey and again blend to combine

Pour smoothie mix evenly between two large breakfast bowls

Decorate with the coconut, bee pollen, freeze-dried raspberries, cacao powder and berries

Enjoy for breakfast or a refreshing afternoon pick me up

Tips:

For an added energy boost you could add some porridge oats to the smoothie mix

The bee pollen could also be mixed in at stage 1. as it’s soluble

This recipe could be made in large batches and frozen as it will not compromise the nutritional profile of the bee pollen or the honey.
